Chickpeas with Tahini (sesame seed paste)

 Chickpeas with tahini is one of the famous dishes, and it is a main dish for breakfast in the Arab world and especially in the Levant and has become popular in the Western world. Hummus is a staple in the Arab cuisine, used as a delicious dip and a popular accompaniment with Falafel.   

Hummus is rich in protein, contains amino acids, vitamin B complex, vitamin C, iron, potassium, phosphorus, zinc, and manganese.

Ingredients

Dry chickpeas.  2 cups

Baking Soda half teaspoon

The juice of one lemon.

Salt teaspoon.

Garlic 2 cloves.

Ground Cumin 1 teaspoon. 

Tahini three tablespoons

Chopped parsley to serve.

Method of preparation

Soak chickpeas with half a teaspoon baking soda in 2 cups of water overnight. (Or use canned chickpeas). Note: canned chickpeas is easier to make but not as delicious.

Boil soaked chickpeas for 2 hours or until well done.

Blend the chickpeas with tahini, garlic, lemon juice 3 tablespoons of the soaked chickpeas water and salt until you have a smooth, homogeneous mixture.

Pour the chickpeas with tahini into the serving dish the way you like, add a spoonful of ripe chickpeas, add olive oil, a pinch of chopped parsley.
